1/2 cup Extra Virgin Olive Oil Aceite 1881

1/2 pound potatoes, thinly sliced

salt and pepper to taste

1 large onion, thinly sliced

4 eggs

salt and pepper to taste

2 tomatoes – peeled, seeded, and coarsely chopped

2 green onions, chopped



Step 1: Wash, peel and cut the potatoes. The best way to do it is along and, later, across. Then put to heat the pan with the Aceite 1881 in it and fry it for about 25-30 minutes.

Step 2: Remove it and drain the remaining oil. Clean the pan and store the oil.

Step 3: Break the eggs in a bowl and beat them. Add salt to your taste.

Step 4: Put the pan back to heat with a little Aceite 1881 in it. Pour half the eggs and wait for them to begin to take texture

Step 5: Add the potatoes to the center and spread to the edges. Once they are doing better by that part, lift it slightly with a spatula and pour the other half of the eggs on top.

Step 6: This is the hardest part! Place a plate on the pan and, very carefully, pass it to the plate. Then pour it again on the side of the egg less set.

Step 7: Leave it for a few minutes, serve it and enjoy the best of Spanish cuisine at your table.
