According to the International Olive Council, Extra Virgin Olive Oil, in its organoleptic assessment, must have a fruity greater than 0.0 and have 0.0 defects, in addition to other requirements established by the regulations. In S.A.T. 1941 Santa Teresa we demand a fruity higher than 3.5. The result is a different, natural, fruity and green oil that contains the essence of the ancient olive trees of Osuna.
