Making the oil

Between the months of December and February, the hundred-year-old olive trees of Osuna bear their fruit to the farmers and so begins an exhaustive harvest of the olive, picked manually directly from the olive tree without the fruit falling to the ground.

At Santa Teresa, we classify the olives according to their variety and degree of maturity in order to select only those fruits that will guarantee the extra quality demanded by 1881. After the selection process comes the milling, from which comes an olive paste through which we extract the AOVE.

In the cellars of our olive-oil mill, in Osuna, we carefully store our liquid gold before bottling it in optimal conditions so that it reaches your table with the same flavour as always.

The 1881 Extra Virgin Olive Oil is formed from a Coupage (blend) of the Manzanilla, Hojiblanca and Lechín olive varieties, which make an exquisite combination with a characteristic Andalusian flavour, which evokes loving care and age-old knowledge in infinite nuances that harmonize and give character to any dish.

Our vinegar is produced in the tranquillity of the Jerez wine cellars. There it ages, just like wine, following a process of exclusive vintage: the traditional system of soleras and criaderas. It has an aroma and harmony that blends with any set of recipes, making the 1881 vinegar, Jerez designation of origin, one of the essential dressings in the Mediterranean diet.

Olives

Selected with care, the 1881 whole table olives make a very healthy appetizer, and which are perfect for sharing. Both in their green manzanilla or black varieties, our olives convey the soul of Osuna in every bite.
